SCONE RECIPE
425 degrees
2 cups flour
1/4 cup sugar
1 T. baking powder
1/2 cup of whatever dried fruit you want (raisins, cranberries, dates etc.)
1/4 cup. mini semi-sweet choco chips. (I always substitute something like orange peel, lemon peel, or lime peel.
1 1/4 cups whipping cream.
If you use any extract keep it to a minimum or perhaps cut back just a tad on the cream. If I haven't had enough cream I have substituted half and half but I've never made them with only half and half. Might work.
Combine flour, sugar, baking powder, and salt in a bow. Blend well. Add the fun stuff. Pour cream into dry ingredients only until sticky dough is formed. Turn out onto a lightly floured surface and knead ONLY 8- 10 times. This is important.
Pat dough into a 1/2 to 3/4 inch circle or square and cut into wedges. Place them one inch apart on parchment- lined baking sheet. Brush with egg whites or additional cream if you want. Sprinkle with coarse sugar, if desired.
Bake at 425 degrees for about 15 minutes or until golden and springy to touch.
I've used dozens of combinations of add-ins. Lavender and lime peel are great. Chopped orange peel and nuts are good. Chopped ginger and nuts. Cranberry-raisin blend. Pretty much anything goes.
Another tip: make sure your oven is preheated to 425. They bake better that way.
You can also make up the dough and freeze before baking. And you can freeze after baking. It's a great gift.
